Long standing working relationships with growers enable Boutinot to source premium fruit, with the ultimate aim of making excellent quality Australian house wines with true style and character. The grapes are picked at night/dawn to keep them as cool as possible. Grapes were picked earlier than usual for this area to ensure balance and freshness. They are gently crushed to maintain the bright, fresh flavors crucial to the clonal tang. Fermentation in temperature controlled stainless steel retains the fresh fruit character.
